How's this for making a good first impression? WQXR newcomer and afternoon host Naomi Lewin blew away the competition at the second annual WNYC/WQXR Thanksgiving Pie bake-off on Tuesday.
Lewin has been kind enough to share the recipe for her winning Black Pepper Maple Walnut pie with us all.
Black Pepper Maple Walnut Pie
(adapted from the Summit Lodge in Killington, Vermont)
1 1/2 cups heavy cream
2 Tbsp. butter
1 1/2 cups maple syrup
1 tsp. salt
1/3 cup + 1 Tbsp. flour
Generous 1/4 tsp. finely ground black pepper
1/3 –1/2 cup chopped walnuts
One unbaked 9” pie crust
More heavy cream for whipping
Preheat oven to 375º.
Mix all ingredients (except walnuts) in the top of a double boiler. To avoid lumps, stir enough liquid into the flour to make a paste before adding it. Stir filling with a wire whisk until smooth.
Cook filling over medium high heat for 20 minutes, or until somewhat thickened (note that it will not thicken completely). Do not allow to boil.
Cover the bottom of a 9" pie crust with chopped walnuts. Pour filling into the crust over the walnuts.
Bake at 375º for 30-35 minutes, or until pie bubbles around the edges, and crust is golden.
Cool on rack, then chill thoroughly. Serve topped with whipped cream.
